I believe I have perfected my wild game jerky making process.

If anyone is interested, let me know and I will be more than happy to walk you through the process I currenytly use with plenty of detail

Jerky recipe from Harvest Maid Food Dehydrating Instruction Book  we've used with beef, venison & bison. Marinade for 1 pound of meat :4 TBS soy sauce,4TBS Worcestershire sauce,1 TBS Ketchup,,1/4 tsp garlic powder,1/4 tsp onion salt,1/2 tsp salt & 1/4 tsp pepper(more pepper for hotter jerky ,we've used crushed hot red pepper for real flavor.Place the meat in the freezer until semifrozen as it's easier to cut into 1/4 or 3/8 inch strips.We make a large batch of the marinade for several pounds of meat which we place  in a bowl in the refer overnite then drain the marinated meat in a colinder and start dehydrating  at 145 degees for 8 to 10 hours.While at the SHOT show I tried some Winchester Ham Jerky which was good as it had maple syrup in the marinade.

Shore Lunch has a line of jerky seasonings that is real good. I picked up a box of the original blend at the local supermarket for 5 bucks. One box is enough for 15 lbs. The guys at work can't get enough.....the only complaint is I didn't make enough.

Our friends really liked the recipe we used and made their own jerky with elk & deer using the same ingredients,we've sent the recipe to other hunters .
