  • Almond crusted speckled sea trout

    Went fishing with some guys from work a couple weeks ago, and we caught a mess of sea trout in the GA tide waters off St Simon's.

    Grind up some one sliced almonds in the food processor. About 2 cups.

    beat 3 eggs in a bowl add salt and pepper to taste.

    put one cup flour in a paper bag.

    black iron skillet on med high heat.

    1/4 cup cooking oil.

    Heat the oil in the skillet

    Put 4 pieces of fish in the paper bag and flour shake around real quick.

    Drag both sides of the fish through the egg wash

    Coat all sides of the fish in the crushed almonds.

    Put in hot oil cook on each side 2-3 min each until golden brown.

    Serve with whatever sides you like. Goes great with hush puppies and slaw!
